It would be nice if I could modify the text associated with color labels

This seems like a no-brainer to me. Until we get pop-up columns, I was hoping to use the labels as a replacement. I wanted to assign a name (of a person) to each color so that I could assign the person to the specific task. For me to do this right now I would have to remeber what color goes with each person- too complicated to be practical.

And, even more importantly for me, the colors.
