Interesting. How does TextEdit store this information? Is it part of the .RTF file format?
Do you think it would make sense for Mori to have the option (in Preferences) to set some of these fields globally - in every document?
FYI, TextEdit's Show Properties window has the following fields: Author, Company, Copyright, Title, Subject, Keywords, Comment.
To answer my own question... I just looked at TextEdit's preferences, and there's an option:
Properties:
Document properties can only be used in rich text files. Choose File > Show Properties to change settings for individual documents.
Author: ___
Company: ___
Copyright: ___
Yes I think it would make sense for Mori to have the option (in Preferences) to set some of these fields globally - in every document. Sort of a template feature, I like the idea, it would be useful.

As long as this is already there, perhaps the subject, keywords, and comment fields could be accessible through columns in Mori's window? That way, people won't have to reinvent the wheel by creating custom columns.
(I don't see as much need for having Author and Company, etc. as visible in columns, but why not?)
Rather than merely setting some of these globally, I'd like to see them settable for individual folders as well.
Consider this situation: working as a writer one has some fiction and non-fiction work. The fiction is mostly published under a pseudonym, or variation on one's real name. However, some of it is romance short stories, which require a different pseudonym. The non-fiction work may all be under one name, but possibly not.
